3 eggs
2 cups sugar
2 cups peeled grated zucchini
1/2 tsp. vanilla
1/2 tsp. salt
3-1/2 cups flour
2 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 cups seedless raisins
1 cup walnuts
Mix sugar and oil, blend in eggs and zucchini, add salt, soda, flour, spice and flavouring. Stir in raisins and nuts. Bake in 2 greased and floured 9x5x3 loaf pans. Bake at 350 degrees for 75 minutes.
